On medium high heat and once that skillet is really hot (test by holding the palm of your hand 2″ to 3″ above the surface of the skillet and check for a truly hot pan) add 1-2 tablespoons of butter, and then the steaks. Cook them 3 minutes then turn, adding more butter to the skillet as you turn them and cook for an additional 3 minutes. This will produce a medium rare steak. Add another minute per side for medium well. An easy and excellent marinade to use if you want more flavor than just salt and pepper provide is to add 2 cloves of garlic, 3-4 tablespoons of olive oil, and 2-3 sprigs of thyme to a plastic bag, add steaks, seal up and store in refrigerator for 4 hours or more.
